Job Details

ResponsibilitiesTo maintain the required level of hygiene/HACCP as laid down both legally and by Mast Kalandar standards manual.To control food costs properly by maintaining accurate records of all the ingredients used in the responsible department and by checking that stock is used in rotation to avoid the possibility of waste and pilferage.To monitor stock movement to ensure stock security and utilization.To reduce dump of finished products and work-in-progress products.To understand the effect of food costs and daily departmental costs on profit & loss results of the company.To maintain the standards of the kitchen equipment and personal belongings (shoes, chef coats, aprons etc.) to the standards of Mast Kalandar standards manual.To control health & safety of the Assigned Area of Activity (AAA) as per the standards manual of Mast Kalandar.To carry out or delegate mise-en-place needed according to the standards manual of Mast Kalandar.To assist the Sous Chef with menu changes, ideas as and when required.To be responsible for the basic day to day section training of the Commis and Demi Chef De Partie as required.To report any break down of kitchen equipment and/or kitchen hazard to the Sous Chef.To assist and ensure the smooth running of kitchen to serve the dishes promptly & professionally as per KOT to enhance guests level of satisfaction. To comply with and act in accordance to the fire safety policy of Mast Kalandar.To ensure highest quality of dishes through the constant supervision and participation of food (seasoning, portion , appearance). To attend all sorts of training related to technical or behavioral for enhancing expertise and knowledge and improve the performance.To comply with and act in accordance to the Code of Conduct and regulations of Mast Kalandar.To demonstrate high standard of ethical, morale value to become an exemplar for the team members.To assist the team members to achieve the departmental goal and as well as the goal of Mast Kalandar.To create a friendly, professional environment which fosters teamwork and healthy relationship.To be available at the crisis time.
Additional Degree: BHM (Hotel Management)
